LEMON POPPYSEED CAKE

Sunshine in the form of cake, for your pleasure! Filled with flavor, this fresh crumbly cake is dappled with poppy seeds. You can also make muffins instead of a cake.

CAKE

½ cup coconut oil, melted + oil for greasing

½ cup rice flour

¼ cup coconut flour

1 teaspoon baking powder

1 tablespoon poppy seeds

Pinch of sea salt

⅓ cup honey (or coconut syrup)

4 large eggs

½ cup coconut milk or other milk alternative (see recipe)

Grated zest of 1 lemon

Juice of ½ lemon

A few drops of stevia (optional)

Whipped Coconut Cream (see recipe)

ON TOP

Grated lemon zest

CAKE PAN SIZE

8 inches (you can also use muffin pans)
